We all have our favorite items on local menus, but now’s the perfect time to branch out and taste something altogether new and seek out the best local dishes that you never knew about.

In an effort to help you rediscover the dining scene in 417-land, we made some calls and did a little bit of brain-picking. We asked local chefs and restaurant owners to clue into their most surprising culinary creations, quizzing them about new menu items, off-the-menu secrets and everything in between. And if they didn’t have an answer, we asked them again. The research is in, and the results are juicy, delicious and absolutely necessary to try on your next dinner out.
