Recipe: Bite-size Banana Pound Cakes

Try these delicious bite-sized banana pound cakes dipped in dark chocolate!

Last night, I decided to make this recipe before I shared it with you all. And let me tell you, it's well worth your time. Not only did they fill my house with an amazing banana-chocolate aroma, but they were so fun to make! I added my own flair to the recipe below by replacing the overly ripe banana with a perfectly ripe organic banana and the buttermilk with 8th Continent vanilla soy milk. I got a little worried when adding the milk because it made the batter quite watery, but I kept mixing it in and eventually I got my perfect batter. I used a mini muffin pan instead of a silicon mini baking tray that Emma used, but it worked perfectly. Like I said, I used a mini-muffin pan. I didn't grease it because it is a non-stick and the muffin-shaped cakes come out easily with a spoon if you take them out of the pan right away and let them cool on a plate before dipping in the chocolate.

For Cakes
• 2 cups flour
• 1 stick of softened butter
• 1 cup sugar
• 3 eggs
• 1 overly ripe banana
• 1 teaspoon baking soda
• 1/2 teaspoon salt
• 1 teaspoon vanilla
• 1/2 cup buttermilk, 2% milk, or soy milk
For Chocolate Dip
• Dark chocolate chips or chunks
• Vegetable Oil

For Cakes
• Cream together softened butter, sugar, and banana until fluffy
• Fold in eggs and vanilla
• Stir in flour, baking soda, and salt
• Slowly stir in buttermilk
For Chocolate Dip
• Put about half a bag of chocolate chunks and about 2 tablespoons of vegetable oil in a micrwave safe bowl

For Cakes
• Bake in a bite-size pan of your choice at 325 degrees for 12-15 minutes
For Chocolate
• Microwave chocolate and vegetable oil for 30 seconds at a time, stirring between each heating, until melted
