It's cold...I know it, you know it. And what's better than a warm bowl of oatmeal on a frigid day like this? Emma at Food Coma has a nice recipe for some homemade oatmeal with lots of choices - which is awesome. I eat oatmeal for breakfast pretty much every day, so I'm excited to come to this recipe again and again to try new things. There's lots of ideas in the picture above, but only three recipes below, so if you find a great combonation, I'd love to hear it! • 2 cups oatmeal
• 1/3 cup sugar
• 1 teaspoon baking powder
• 1/4 teaspoon salt
• 3 tablespoons butter
• 1 egg
• 1/4 teaspoon vanilla extract
• 1 cup milk
• 1-2 bananas

For Pumpkin Spice
• 1/4 cup pumpkin puree
• 1/4 teaspoon cinnamon
• Pinch of nutmeg

For Coffee Cake
• 1/4 teaspoon instant coffee or ground espresso
• 2 Tablespoons cold butter
• 1/4 cup flour
• 3-4 tablespoons brown sugar

• In a bowl, mix together oatmeal, sugar, baking powder, and salt.
• In another bowl, combine butter, egg, vanilla extract, and milk.
• In a well greased baking dish, place a thin layer of sliced bananas, then oatmeal mix, then milk mixture (try to distribute the milk evenly)

For Pumpkin Spice
• Add pumpkin puree, cinnamon, and nutmeg to milk mixture before you pour over oats.

For Coffee Cake
• Add coffee ground or instant coffee to milk mixture before you pour over oats.
• In a bowl, mix together butter, flour, and brown sugar with your (clean) hands until it's crumbly

• Bake at 350 degrees for 20-25 minutes

For Coffee Cake
• Garnish top of oatmeal with a crumb topping for the last 10 minutes of baking
