Recipe of the Day: Homemade Cake Donuts

I only recently discovered the wonders of carrot cake...because, let's face it, vegetables for dessert just seems wrong. But this past Christmas Eve I went to a family friend's house for dinner, and she is an amazing cook so I decided to give her carrot cake a shot. I was extremely suprised when it was sweet, but not too sweet and incredibly tasty! Someone else in the office sent me a link to this recipe today and I absolutely can't wait to try it. I know I'm taking a leap of faith on sharing it with you all before I try it out myself, but I'm just so excited about my discovery of carrot cake, and I trust Emma here. She also has a recipe for Red Velvet cake donuts, but you'll have to visit her blog to see that recipe. For Carrot Cake
• 4 tablespoons vegetable shortening
• 1/2 cup sugar
• 1 egg
• 1/2 cup evaporated milk
• 1 teaspoon vanilla extract
• 2 cups flour
• 2 teaspoons baking powder
• 1/2 teaspoons salt
• 1/4 teaspoon nutmeg
• 1/2 teaspoon cinnamon
• 1/2 cup finely shredded carrot

For Cream Cheese Frosting
• 1/2 block softened cream cheese
• 1 stick softened butter
• 1 cup powdered sugar

For Carrot Cake
• Combine vegetable shortening, sugar, egg, evaporated milk, and vanilla, then mix until combined.
• Add remaining ingredients and stir.
• Use clean hands to form the dough into a ball, cover in plastic wrap, and refrigerate over night.
• Roll out the dough, 1/2 thick and use cooke cutters or biscuit cutters to cut out your donuts.


For Carrot Cake
• Heat 2-3 inchest of vegetable shortening to 375 degrees (hint: use a candy thermometer).
• Lay a few donuts in the oil at a time, allow to cook for 1-2 minutes, then flip and cook for another 1-2 minutes.

For Cream Cheese Frosting
• Combine ingredients!
