Recipe of the Day: Pasta alla Vodka

It's Monday and you're probably looking for something simple to cook for dinner or thinking about ordering pizza. Or, at least that's generally how my Mondays go and I tend to fall victim to the online ordering ease of pizza. But! I have found something that could save you from going down that road and relax you a little at the same time. Emma from Food Coma tried out this pasta recipe that calls for Vodka in the sauce, which sounds pretty interesting. Now, if only I were  21. You can probably enjoy it, though! • 16 ounces dried pasta (any kind you like)
• 28 ounce can of whole tomatoes
• 2-3 tablespoons olive oil
• 1 tablespoon minced garlic
• 1/4 cup chopped yellow onion
• 1 tablespoon tomato paste
• 1/2 tablespoon red pepper flakes
• 1/4 cup vodka
• 1/3 cup cream
• Fresh basil for serving (optional)

• Cook pasta according to the directions
• While pasta is cooking, heat the oil in a sauce pan
• Sautee the onions until they begin to soften, then add garlic
• Drain the tomatoes (but keep the juices incase you think your sauce is too thick later)
• Add the tomatoes, tomato paste, red pepper flakes, vodka and cream
• Cook for 4-5 minutes, stirring occasionally
• Put sauce in a blender to blend the tomatoes, or simply crush the tomatoes up in the pan
• Once sauce is blended and hot, serve over warm pasta with some fresh basil!
