Recipe of the Week: Oreo Cheesecake Bites

Not long after I started my job here at 417 Magazine, we had a Bake Off. Many delicious things were entered anonymously, waiting to be judged by their peers. There were cupcakes, cookies, and creative ideas but one stood out among the others. Savannah Waszczuk, our Lifestyle Editor, made Oreo Cheesecake Bites that blasted the rest of the competition out of the water. Now, I’m not saying that the other recipes weren’t good…Savannah just knows how to use America’s Favorite Cookie to her advantage. For Cheesecake
• 36 Oreo cookies, divided
• 1/4 Cup (4 tablespoons) butter
• 4 packages (8 ounces each) cream cheese, softened
• 1 cup granulated sugar
• 1 cup sour cream
• 1 teaspoon vanilla
• 4 large eggs

For Icing
• 1 8-ounce cream cheese
• 1/2 stick butter
• 1 1/2 to 2 cups powdered sugar
• 1 teaspoon vanilla extract
• 1 package mini oreos (for garnish)

For Cheesecake
• Line a 9x13 inch baking pan with foil, ends extending over the sides
• Finely crush 24 Oreo cookies
• Melt 1/4 cup butter, mix with crumbs
• Press onto bottom of prepared pan
• In a large bowl, beat the cream cheese and sugar with a mixer until blended
• Add sour cream and vanilla; mix well
• Add eggs, one at a time, beating after each just until blended
• Chop up remaining cookies and gently stir into the batter
• Pour batter over cookie crust

For Icing
•Beat room temperature cream cheese and butter with electric mixer until well combined
• Slowly beat in powdered sugar
• Add vanilla extract and blend

For Cheesecake
• Bake at 35-40 minutes at 325 degrees, until sides are set and the center is almost set
• Cool completely on a wire rack in the pan
• When cheesecake is completely cooled, cover with plastic wrap and refrigerate for at least two hours
• When chilled, remove the cheesecake using the foil overhang and cut into bite-sized pieces

For Icing
• Fill a cake decorator with icing
• Put one dollop on top of each cheesecake bite using a star tip
• Garnish with mini oreos and serve!
