The Wheelhouse

Route 66 Food Truck Park, 1530 E. Saint Louis St., Springfield
What they do: The Wheelhouse is one of the O.G. food trucks in Springfield, and we still love the heck out of it. They blend southeast Asian flavors and Mexican-style dishes for creative takes on everything from pad thai to nachos.
What to order: Pineapple fried rice flavored with ginger-habanero coconut oil.

Chubby Cactus Tacos

Springfield
What they do: This truck slings some seriously addictive tacos, dripping with juice from tender slow-cooked meats and packed with flavor. The mini quesadillas, for example, are dunked into spicy chili oil before they’re fried on the flat top, and holy moly they’re good.
What to order: Barbacoa dipped and fried mini quesadilla.

London Calling Pasty Co.

Route 66 Food Truck Park, 1530 E. Saint Louis St., Springfield
What they do: Pasties are the name of the game here, each one featuring tender pastry dough folded around a variety of hearty fillings—and they’re huge!
What to order: Chicken tikka masala pasty with banoffee pie for dessert.

Not’Cho Ordinary Taco

Route 66 Food Truck Park, 1530 E. Saint Louis St., Springfield
What they do: When you see the brightest tie-dye-vibe truck around, you know you’re in for an uncommon taco experience. Flavor combos are always creative and well executed, and the specials will knock your socks off.
What to order: A rotating menu special, like the Korean bulgogi tacos with kimchi.

Olive Branch

Route 66 Food Truck Park, 1530 E. Saint Louis St., Springfield
What they do: Olive Branch mixes Mediterranean flavors with local seasonal ingredients to create pita wraps, slider sammies and Basmati rice bowls filled with freshness.
What to order: Beef kafta basmati rice bowl with harissa sauce.
