There are two kinds of diners: The ones who gravitate toward a restaurant’s signature dishes because if it’s a diner fave it must be good. And there are those who ignore them in favor of finding that one, weird, perfect, fun surprise on the menu. I’m the latter most of the time, but I might throw that tendency out the window at The Finley (206 E. Elm St., Ozark, 417-582-1912) because their Signature Crab Bisque has all the makings of a mouthwatering meal. It features blue crab meat in a thick soup that’s topped with cream and madeira wine. Cream, wine and crab are three words that I like very much. And here, I think it might be smart to follow the crowd.
