Locally Made Chimichurri from Pampa Empanadas

Some call it Argentinian pesto. I just think it’s semi-liquid gold. Chimichurri, the herbaceous, Argentinian sauce, is my favorite condiment. What’s not to love about cilantro, parsley oregano and garlic soaked in olive oil and red wine vinegar? Pampa Empanadas (4268 Hillcrest Ave., Springfield, 417-365-5151) is a new Argentinian-owned empanada restaurant where chimichurri can be purchased by the jar. Eat it with their empanadas, slather it on grilled meat. This condiment adds aromatics and an acidic twist.
