Taiyaki is a popular Japanese street food, but a love for this dessert transcends ocean borders. In fact, you can try one for yourself at Sno Bubble Tea in Springfield, Missouri. Traditionally, it’s a sweet cake with a waffle-like texture that’s filled with red bean paste and shaped like a Japanese sea bream, a symbol of good fortune. But when this dessert made its way to South Korea, it came in the form of a different lucky fish: the bungeo, or carp. Bungeo-ppang is the version of this treat you’ll find at Sno Bubble Tea. It’s a bit bigger and features an open mouth, which, according to owner Alice Oh, makes it the perfect vessel for soft-serve ice cream. She makes the taiyaki batter in-house using her own special recipe. We suggest ordering it with the red bean paste to try it the traditional way, but you can also opt for Nutella, marshmallow, chocolate or caramel.
