Wings should be cooked to an internal temperature of 190°F. No, you won’t dry them out, but cooking them longer allows the skin to crisp up and the meat will fall off the bone, giving you that clean bone you see in my videos.”

For the Wings
• 5 pounds of wings
• ¼ cup olive oil
• 1½ teaspoons garlic powder
• 1½ teaspoons ground cumin
• ½ teaspoon smoked paprika
• 2 limes, juiced
• Kosher salt and freshly ground pepper to taste
For the Glaze
• 4 tablespoons butter
• 2 tablespoons honey
• 1 tablespoon hot sauce
• 2 tablespoons cilantro
• 1 lime, juiced
To Prepare
Combine all ingredients and marinate wings for 4 hours. Preheat grill to 400°F. Grill wings to internal temperature of 190°F. Combine glaze ingredients and heat until butter is melted. Remove wings and toss in glaze, top with fresh cilantro and enjoy.
