Pineapple Fried Rice

Fried rice makes a filling vegetarian entree—plus, it’s a quick and easy way to break out of a cooking rut.

Ingredients
-1/3 cup tamari (gluten-free soy sauce)
-1/3 cup water
-4 tablespoons grapeseed oil
-½ cup diced onion
-½ cup shredded carrots
-1 cup diced pineapple
-½ cup diced bell peppers
-Red pepper flakes to taste
-½ cup petite green peas
-2 cups cooked rice
-Green onions, sliced for garnish


To Prepare
Mix tamari and water to form a stir fry sauce. Add grapeseed oil to a wok or pan heated on medium-high heat. Add onion, carrots, pineapple and bell pepper to pan. Stir fry for 45 seconds to a minute, or until onions start to look translucent. Add stir fry sauce, red pepper flakes and peas to pan and heat for 15 seconds. Turn heat to low and add rice. Stir to incorporate rice into sauce—be sure that all rice is covered in sauce, but don’t let the rice burn.
