Grison Dairy & Creamery is owned by Adrian Buff, who gained cheese-making skills during an apprentice program in Switzerland. Grisontaler cheese was his first creation, “a raw milk cheese with the sweetness and nuttiness of Swiss and a nice earthy tone,” Buff says. He also makes a mild and creamy Ozark Mutschili, modeled after the mutschili in Switzerland that’s traditionally named after the mountain or town where it’s made.
