Of all the ingredients that you can put inside a pie, rhubarb will always be the best. Apples are classic, and sweet peaches are a short-lived treat at their peak, but rhubarb tops them all. It adds a tartness that elevates any dessert from saccharine and flat to bright and exciting. That’s why I love the strawberry rhubarb pie from Prairie Pie so much. It’s the best blend of sweet and tart, and there’s more rhubarb packed inside that buttery crust than you get in most pies.
