Pick up some fresh blueberries and make yourself a refreshingly sippable summer drink. And bonus, it's a great recipe to make with the kids!
3 cups fresh blueberries
1 cup freshly squeezed lemon juice
½ cup sugar (plus more to taste)
8 mint leaves (optional)
5 cups water, plus 1 cup
Blend blueberries, lemon juice, sugar, mint and 1 cup water in a blender. Strain through a sieve and discard solids and seeds.
Stir together the blueberry mixture and remaining water.
Serve over ice and garnish with lemon slices. (Hint: You can freeze this mixture into ice pops too!)
