At my house, hot sauce is a condiment we can never run out of. If we do, oh boy. We douse everything with the spicy stuff. That’s why I was excited to see the locally made small-batch hot sauces from Springfield Trading Company. Their spicy garlic variety adds smashed garlic to a classic Louisiana hot sauce recipe, and the smoky jalapeño makes good use of those perfect green peppers. They’ve offered a couple other types of sauce as well, and at press time they were slinging something a little more exotic: the Banana-peño, made with habaneros, jalapeños, aged rum, cumin, smoked bananas and garlic. And they recently released a Cajun-Creole seasoning blend with plenty of cayenne heat.
