I’m pretty picky when it comes to cocktails. Sugary ones do nothing for me. I can’t even drink them, but I can’t get enough of the tart ones. That can be a problem sometimes, as sweet and tart often go hand-in-hand. The Done Deal on the summer menu at Progress (2144 E. Republic Road, Suite B101, Springfield; 417-799-9388) manages to find the perfect balance. It starts with white rum, yellow chartreuse and pineapple liqueur, which can all lean sweet. But the drink is finished with lime juice, which adds enough acidity to make those sweet elements taste balanced instead of overwhelming. It’s supremely sippable, and one is just not enough.
