Add up all those lovely Italian words, and you get a salad of fresh arugula topped with toasted pine nuts, shaved Parmesan cheese and balsamic vinaigrette. The bright and spicy arugula is complemented perfectly by the natural earthy sweetness of the balsamic vinegar and the nutty cheese. The crunchy little bites of pine nut are the icing on the cake. And even though the arugula is oh-so- delicate, it holds its own among the flavorful toppings. Make it a meal or order it with a pretty pie topped with pepperoni.
